My vision for Maravilloso began in culinary school where an experiment with my Grandmother’s recipe for tomatillo sauce yielded my first signature recipe. I was curious to see if it could be used with a Spanish tapas-style appetizer called Chopitos - or tiny battered and fried shrimp. The result was a Tex Mex Tapas creation I decided to name Chopitos Tomatillos de Maria - to honor my Abuela.
One of my instructors was so taken with the recipe that he urged me to enter it into the International Tapas Competition for Culinary Schools. My creation was chosen from over 120 entries as a top ten finalist and I traveled to Valladolid, Spain for the final competition.
When I won the grand prize my dream to open Maravilloso was born. I wanted to celebrate the culinary legacies of southwestern America and southwestern Europe by melding the two cultures together into a delectable array of new flavors.
